How many joint lock variations are there in Aikido, in total?

Hmmm... Let's see...
The five basic pins/locks (ikkyo - gokyo) all manipulate one or more joints. Kotegaeshi and shihonage are often considered throws, but they do utilize joint locks, so let's include them as well. Then you have hiji-jime, ude-garami and juji-garami. Some instructors also recognize kaiten-osae and irimi-osae as valid techniques.

So, I'd say eleven (with another two I'm not sure of) techniques that primarily utilize joint-locks. But this applies only to aikikai dojos. I'm not familiar with the official curriculum in yoshinkan, shodokan, and other aikido styles.

Like pugpaws pointed out, there are practically limitless variations of joint lock techniques. What I listed are (as far as I can remember) those that are included in aikikai's official curriculum. CMMIW.
